Black Bean Salad/Side Dish

Black Bean Salad/Side Dish

Ingredients

  • 1 can of black beans rinsed
  • 1/2 a red onion
  • 1/2 a red pepper
  • cup of corn
  • a handful of cherry tomatoes
  • about half a bunch of cilantro or to taste
  • salt and pepper

For the dressing:

  • 3 tsp of apple cider vinegar
  • 1 lime (juiced)
  • squirt of honey
  • drizzle of olive oil

Instructions

    1. Add all of the ingredients to a large bowl, chopping up your vegetables and of course your cilantro. Add your salt and pepper.
    2. Put all of your dressing ingredients in a jar and give it a good mix. Pour it over your black bean mixture and gently toss.
    3. Enjoy it by itself, in a salad, with some chips, etc. It can be eaten any way you like. Make sure you check out our prior video on the health benefits of beans!
