Maple Roasted Carrots

These roasted carrots are so simple to make and they can be prepped in advance of any meal.

Do you want a delicious side to add to your Christmas, or any other, dinner? Look no further. These roasted carrots are so simple to make and they can be prepped in advance (do all of your peeling and chopping ahead of time).

Ingredients

  • 7-9 carrots
  • 2 tbsp maple syrup
  • 2 tbsp olive oil
  • 3 minced garlic cloves
  • 5 sprigs of thyme
  • Goat cheese crumbles
  • Salt and pepper

Instructions

  • Preheat your oven to 375 degrees.  
  • While your oven is warming up, peel and chop your carrots lengthwise.
  • Place your carrots on the sheet pan and add all of your ingredients aside from the goat cheese and one sprig of thyme.  
  • Toss all of the ingredients together until all of your carrots are coated well.
  • Place the baking sheet into the oven and cook for roughly 35-40 minutes.
  • Stir once or twice while they are roasting.  
  • Once the carrots have wrinkled and are soften, pull them out of the oven.
  • Place them onto your serving tray.
  • Sprinkle with fresh thyme and goat cheese.
  • Top with fresh pepper and enjoy!
  • Also, if you want to give your carrots some crunch you can always add some chopped pistachios or pumpkin seeds.
