Real Food Recipe: Crockpot Chicken Curry

Who doesn’t love a good crockpot recipe? Today we are making a chicken crockpot curry with real food ingredients.

You can pair it with your favorite rice, grain or even cauliflower rice if you like.

Ingredients

  • 1 can of coconut milk
  • 1 scoop of peanut butter
  • 5 tsps of red curry
  • 2-3 garlic cloves
  • 1 chopped onion
  • 2 chicken breasts
  • 1 red pepper
  • 1 zucchini

Instructions

    1. Mix the coconut milk, peanut butter and curry. Next, add minced garlic and chopped onions.
    2. Once everything is mixed, add chopped chicken into the pot and ensure all of your chicken is coated with the sauce. Cook it on low for 5 hours or on high for 3.
    3. For the zucchini and red pepper, chop them and either sauté them or add them to the crockpot for the last hour of cooking.
    4. Top it with some fresh cilantro and lime juice. Enjoy!
    5. Also, depending on what you like, play with the ingredients! Some people may prefer more peanut butter while other people may prefer more curry and spice.
