Frittatas are a great option! You can eat them throughout the week for breakfast or even at lunch with a salad. If you have a favorite veggie, you can always add that in instead of broccoli. You can even use bacon instead of ham or no meat at all. Don’t like cheese? Skip it! Or switch it out for goat or feta.

Ingredients

  • 10 eggs
  • 1/2 cup of cream
  • 1 cup of cheese
  • 1 onion
  • 2 cups of broccoli
  • 1 cup of ham
  • Salt and pepper

Instructions

  1. Preheat your oven to 375.
  2. Add olive oil to your oven proof pan. On medium heat add in your diced onions.
  3. Sauté until they are softening up and getting translucent. Add in the chopped broccoli and salt. Sauté until soft.
  4. Turn off heat and add the chopped ham into the pan and then remove it from the heat.
  5. In your bowl, crack 10 eggs and add in your cream. Whisk them together and then add your salt and pepper to the bowl.
  6. Pour your egg mixture into the pan and gently mix all of the ingredients together.
  7. Top it with cheese and then put it in the oven for 20 minutes or until the eggs are cooked through.
  8. Allow it to cool and then slice it for the week and store in airtight containers.
