Real Food Recipe: Jem’s Roasted Garlic Hummus

Here's a delicious hummus recipe that can be made at home.

Not only are chickpeas a great source of fiber and protein, they contain vitamins and minerals as well!

Jem’s Roasted Garlic Hummus

Ingredients

  • 1 large head of garlic
  • 3 cans (15.5 oz) low sodium organic chickpeas
  • 1 tsp coarse salt
  • 1 tsp freshly cracked pepper
  • 1-2 tsp harissa seasoning
  • Extra virgin olive oil
  • Reserved liquid from 1 can of chickpeas
  • Juice of 1 large lemon

Instructions

    1. Cut the top off of 1 head of garlic. 
    2. Cover with a tablespoon of EVOO, wrap in foil and roast in the oven at 350 degrees for 30 min or until very soft.
    3. Drain chickpeas, reserving the liquid from one can. In a large bowl run water over peas and rub them between your hands to loosen their “skins.”
    4. Tip the bowl so the “skins” pour out of the bowl. They float to the top so the shelled chickpeas should be at the bottom of the bowl while the peels can be drained off the top.
    5. In a blender or food processor, combine the chickpeas, 1/2 cup olive oil, lemon juice, salt, pepper, and harissa.
    6. Squeeze the soft roasted garlic out of its peel and add it to the other ingredients.
    7. Blend until smooth, adding more oil, lemon juice or seasoning if needed.
    8. Serve in a shallow bowl drizzled with more EVOO and a sprinkle of Harissa.
