Simple Meal Prep Quinoa Dish


  • 1 cup of quinoa cooked
  • 1 red pepper
  • 1 cucumber
  • 1/2 red onion
  • A handful of parsley
  • 1 lemon
  • Olive oil
  • Salt and pepper to taste
  • Feta (optional)


    1. Throw your cooked quinoa into a bowl, drizzle with olive oil and add salt. Juice half your lemon into it. Gently mix it all.
    2. Next, chop all of the remaining ingredients and add them to your quinoa. Gently mix it all.
    3. If you are eating it immediately, top with more lemon juice and feta. To save it for later, store in an airtight container in the fridge.
