Today we decided to cook up a tasty little recipe. If you have never had spaghetti squash before, this is a delicious way to try it.

Stuffed Spaghetti Squash

Ingredients

  • 2 spaghetti squash
  • 1lb of ground beef (or ground meat of your choice)
  • 1 small white onion
  • 1 zucchini
  • 3 garlic cloves
  • 1 jar of vodka sauce or the pasta sauce you prefer (or you can make it from scratch)
  • Parmesan cheese
  • Salt and pepper
  • Olive Oil

Instructions

    1. Start by preheating your oven to 400 degrees.
    2. While it is warming up, cut your spaghetti squash in half and remove the seeds. It is easy to do this with a big metal spoon. 


    3. Next, lay them on a baking sheet covered with parchment paper if you have it.
    4. Drizzle olive oil on them and salt them. You can also use pepper if you’d like. 


    5. Flip them over on the baking tray and use a form to poke them a few times.  
    6. Put them in your preheated over for roughly 30-40 minutes. 


    7. While they are roasting, make your meat sauce.
    8. Add some olive oil to the pan over medium high heat.
    9. Put your diced onions in the pan and cook until translucent.
    10. Next, add your diced zucchini to the pan and your chopped garlic. 


    11. Once your veggies are all cooked through, set them aside in a heat-proof bowl while you are browning your meat (you can use turkey, beef or whatever ground meat you prefer). 


    12. After your meat is basically cooked through, add the veggies back into the pan along with the sauce.
    13. Allow it all to simmer together until your squash is cooked. 


    14. Once the squash has browned slightly on the edges and the flesh pulls off like strings, you can scoop your sauce into them and layer the top with Parmesan cheese. 


    15. Set your oven to broil and throw the sheet pan back in checking frequently.
    16. Depending on your oven, it should only take a few minutes to melt the cheese. 


    17. Pull them out and serve them warm.
    18. You can top with fresh basil or some pepper.
    19. Enjoy!
