Whole Roasted Cauliflower

Ingredients

  • 1 whole cauliflower
  • 4 garlic cloves
  • 1/2 cup of grated Parmesan
  • 1/3 cup of olive oil
  • pepper
  • garlic salt
  • your favorite dried or fresh herbs (optional)

Instructions

  1. Start by preheating your oven to 400 degrees.
  2. While it is warming up, carefully cut out the bottom stem and leaves from your cauliflower.
  3. Mix all of your ingredients in a small bowl (save a few tablespoons of Parmesan for the end of the recipe).
  4. Once mixed, put your cauliflower upside down in your Dutch oven.
  5. Pour about 1/3 of the mixture into the center of your cauliflower so the ingredients can soak the insides.
  6. Flip it over and then rub the remaining oil mixture around the outside of your cauliflower.
  7. Put your lid on your Dutch oven and put it in your oven for roughly 35 minutes.
  8. Check your cauliflower with a fork to see if it is tender. If it is, switch your oven to broil on high.
  9. Sprinkle your remaining Parmesan cheese over your cauliflower and broil for about 4-5 minutes. This will give you a nice delicious crunch on the outside.
  10. Plate your cauliflower and sprinkle with parsley or whatever fresh herbs you enjoy. You can also skip this step!  Slice it up and give it an extra sprinkle of Parmesan if you’d like.
