Real Food Recipe: Lazy Tomato Soup

A very easy tomato soup recipe and can be made dairy free by substituting the heavy cream with vegetable stock.

We know that some of you have started experiencing fall weather which gives us the perfect excuse to make some soup. This is a very easy recipe and can be made dairy free by substituting the heavy cream with vegetable stock. We hope you enjoy it!

Lazy Tomato Soup

Ingredients

  • 5 or so tomatoes
  • 1 large onion
  • 5 cloves of garlic
  • a few sprigs of thyme
  • olive oil
  • salt and pepper
  • heavy cream or vegetable stock

Instructions

  1. Preheat the oven to 450 degrees.
  2. Chop your onions and tomatoes and place them on a baking sheet.
  3. Drizzle with olive oil and gently mix. Add your thyme, garlic, salt and pepper.
  4. Bake for roughly 30 minutes (stirring once or twice) or until your onions are soft and your tomatoes are getting wrinkly.
  5. Pinch the parchment paper and dump the contents into a blender or food
    processor.
  6. Turn it on and slowly add your cream (or vegetable stock)
    until desired consistency is reached. We did about a half of a cup.
  7. Enjoy!
